Bomras
Anjuna, India
Difficult to spot if it weren’t for its mascot, a scarlet rickshaw, parked outside and lit by lanterns, this al fresco terrace has the atmosphere of a private members club. Of course, in an area as touristy as Anjuna international visitors are clocking on to it, but its clientele mostly consists of cultured Indians, including several famous authors and photographers. It’s the second iteration of the restaurant, which was preciously located in Candolim, but regulars will recognise many of Burmese chef Bawmra Jap’s signatures on it: crackling pork and pomelo salad, Scotch eggs with Manipuri black rice and khow suey (noodle soup in this case served with no less than 10 fragrant toppings). One of the motives for moving to the new site was to extend a kitchen garden which green-fingered Jap tends himself, watching over the likes of rocket, sissoo, lemongrass and mustard leaves as diligently as if they were members of his own family and you can really taste his dediction
