This bohemian-looking roadside restaurant, located in a quaint Portuguese villa, is deceptively simple to the outsider’s eye. Gunpowder’s cuisine is intensely regional, focusing on dishes from Andhra Pradesh and Kerala. In fact, most recipes come from owners Satish Warier’s family, keeping the local spice alive (think silken pork ribs or tender beef chilli fried). However, there are also plenty of easy-to-tackle dishes for those who can’t handle the heat, such as Kerala mutton stew with a crisp, fluffy appam (a type of Indian pancake).
