The 40 rooms and suites are spread across both the old and the new, their decor harmonising with the surroundings. While there’s a quintet of dining options, al fresco dinner at Darikhana is a must. Perched on the first floor, above the old stables, it offers uninterrupted views of the burnished sandstone fort and the hotel’s romantically lit courtyard, with its heated pool, below. Here, the menu centres around hand-ground spices, sourced from a centuries-old shop in Old Delhi, and vegetables from the chef’s garden.
