Arriving with a blaze of fire at No.30 on our Asia’s 50 Best Restaurants 2026 list, Naar flies the torch for Himalayan cuisine. Inspired by its spectacular setting amid pine forests and Himalayan mountain ranges, Naar pays tribute to Mother Nature, with a menu guided by the region’s unique six seasons (early winter; winter; spring; summer; monsoon; autumn) and their corresponding ingredients. The name means ‘fire’ in Kashmiri, reflecting chef Prateek Sadhu's passionate mission to put Himalayan cuisine on the map – and also his fondness for plating up dishes cooked to flame-licked perfection on the central grill. The 14 or 15-course tasting menu (pick from meat or non-meat) celebrates the dizzying diversity of the Himalayas, encompassing flavours, influences and ingredients from Kashmir, Ladakh, Uttarakhand, Himachal Pradesh and beyond. Seasonal crowd-pleasers have included dishes such as trout sandwiches starring local, house-cured fish, brined pork with Himachali apples, apricot jam and bamboo shoot pickles, Ladakhi buckwheat pasta with tripe, and pine nut ice-cream with fermented pine syrup and aromatic pine oil. Curated cocktail pairings, non-alcoholic pairings or wine can be added.
