Swerving tropical tropes, the food ethos – initially conceptualised by Aussie chef Nathan Sasi, who previously worked with the likes of Heston Blumenthal – speaks a transnational lingo accented by nose-to-tail butchery, fermentation and preserving. Mindful sourcing and clever treatment – in both the open kitchen and terrace grill whose temptingly-scented plumes fill the air – of organic, island ingredients to pack a serious flavour punch is the deal here.
