Blanco par Mandif
Housed within the Blanco Renaissance Museum complex, the third Balinese restaurant from Mandif Warokka presents a modern take on Indonesian cuisine, as well as drawing inspiration from the cultures of its international clientele. Bread is served with a fiery green sambal instead of butter, while cucumber chilli sorbet contrasts pleasingly with hot seaweed broth. Exemplary presentation includes fresh flowers and deep-fried leaves, creamy custard in a real egg shell and Kilner jars filled with house-fermented vinegars.
