Sometimes it takes an outsider to show the locals the wonder of what they have on their doorstep. This ground-breaking tribute to Irish ingredients comes courtesy of Englishman Jordan Bailey (former head chef at Maaemo in Oslo) and his Danish general manager wife Majken Bech-Bailey. The restaurant name is the Irish word for ‘weather’, the unseen influence behind every ingredient on the all-Irish tasting menu, from potatoes and fermented black garlic to beef tripe, smoked eel, oysters and kelp, delivered to the table by chefs who have given each dish a final tweak with the tweezers at the central counter. As much as possible is grown on the farm onsite (Aimsir is part of the impressive Cliff at Lyons boutique hotel and rural retreat) and although the dining room feels undeniably serious, the adjoining bar is lot of fun before and after dinner.
