The flagship restaurant of Galway's top chef JP McMahon, Aniar focuses on terroir cuisine from the west of Ireland, celebrating the country's long-held food culture. Wild, foraged and hyper-local ingredients take centre stage, enhanced by centuries-cherished cooking and preservation methods, such as curing, pickling, smoking and fermenting. Buckle in: the tasting menu is 24 courses, each one a marriage of flavours. Kelp comes with sea beet; pigeon with stout; and potato with buttermilk. Eels are grilled over charcoal; cheese comes with onion. Dishes are matched with wines and beer from all over the world – alternatively you can choose the Irish drink pairing of local vintages. Children are welcomed with their own tasting menu, albeit a more modest 12 to 14 servings. Like what you eat? Learn to cook the JP way at the boutique cookery school, which offers one-day workshops and private classes delivered by the man himself.
