A marshmallow-pink dining room – a mainstay on the World’s 50 Best list – on one of Alba’s historic side streets is an elegant place in which to enjoy the best of Piedmont’s natural larder. Enrico Crippa’s inventive menus are based on raw or fermented vegetables from the restaurant’s own farm. The famous garden salad contains more than 70 leaves and herbs, while cardoons (artichoke thistles) arrive in delicate milk foam with pungent white truffle. The local theme continues with a 1,800-strong wine cellar that showcases the most interesting of Piedmont’s growers.
