A marshmallow-pink dining room on one of Alba’s historic side streets is a dream-like place in which to enjoy the finest of Piedmont’s natural larder. Enrico Crippa’s inventive menus are based on raw or fermented vegetables from the restaurant’s own farm. Autumn means an eight-course white truffle celebration – the Langhe's most prized incredient. By spring, the spotlight shifts to peas and cuttlefish, in a reduction from its ink. Dishes are a historical homage too: the snails and polenta are made with escargot first bred by Benedictine monks. The herbs used to feed these snails were the same the monks used for their own medicines and infusions, and on the plate today, these herbs appear beside the snails.
