After the shock closure of his famed flagship St. Hubertus in northern Italy’s San Cassiano, Norbert Niederkofler returned with a bang to open Atelier Moessmer in a neighbouring valley. The restaurant takes its name from the former life of its building as the Moessmer Textile Factory. Niederkofler’s ‘Cook the Mountain’ philosophy remains, with the Atelier Moessmer offering one tasting menu that spotlights the singular terroir of the region through a showcase of local mountain produce. Dishes work symbiotically with the seasons and change frequently, with appetisers that include spruce tartlets and waffles with fish lard, served in the garden area during the warmer months, giving diners the opportunity to drink in the gorgeous, natural surroundings. More substantial courses in the main dining room are named after their core ingredient, whether ‘trout’, ‘sweetbread’ or ‘Tyrolean beef,’ but each is meticulously assembled and profoundly delicious.
