The centre of the pizza universe, Pepe in Grani is considered the best place to taste one of Italy's most famous exports. For somewhere with such a big reputation, the small dining room and the festoon-lit terrace don't give much away. That is until you clap eyes on the wood-fired oven, at its heart. Third-generation pizzaiolo Franco Pepe grew up at the apron strings of his parents who ran a pizzeria down the road. His dough is still worked by hand in wooden boxes and never refrigerated – he believes that a cold temperature affects the flavour of the grains. And yet his approach to ingredients is fiercely modern. Toppings include capers and sweet anchovies; juicy figs and blue cheese; and potatoes with mountain herbs. This might also be one of very few pizza restaurants that also offers a tasting menu with multiple slices to try. If you have space for dessert, don't miss the fried sweet pizza: a slice piled high with lemon peel, ricotta, apricot jam, roasted hazelnuts, dehydrated olives and fresh mint.
