Pepe in Grani
The centre of the pizza universe, Pepe in Grani is regularly named as the best place to taste one of Italy’s most famous exports. A small room with a white, grey and exposed stone fit-out allowing a wood-fired oven to take centre stage. Third-generation pizzaiolo Franco Pepe grew up at the apron strings of his parents who ran a pizzeria down the road. His dough is worked by hand in wooden boxes and never refrigerated (the only technology in the kitchen is a thermometer), yet his approach to ingredients is fiercely modern. Toppings include the likes of capers and sweet anchovies, juicy figs and blue cheese and potatoes with mountain herbs.
