Polished stone tiles and a single wall painted earthy brown is the muted setting for some of the most colourful plates in Italy. Davide Caranchini – formerly of London’s Le Gavroche and Copenhagen’s Noma – draws on his travels in Asia and the traditions of the Lombardy region to inform highly original dishes presented as precisely as a chessboard. Eggplant tortelli the colour of squid ink is moistened with a drizzle of elderflower broth, while blushing pigeon is topped with crispy cocoa beans. An on-site greenhouse filled with herbs provides a constant source of inspiration.
