Old-school luxury is the order of the day at this distinguished restaurant, the only holder of three Michelin stars in Florence. Head chef Annie Féolde’s fusion plates are as elaborate as the interiors of the Renaissance palazzo it is housed in, drawing on local flavours as well as techniques from her native France. Seasonal vegetables are served simply with nothing but an egg yolk in its shell, while tagliatelle is delicious with rocket butter, braised sardines and crispy pork.
