This restaurant's head chef Davide Di Fabio has a justifiably big reputation, having cut his teeth at Massimo Bottura's legendary Osteria Francescana. His own restaurant is perched on a mountainside overlooking the Adriatic, comprising an elegant dining room and an extensive terrace perfect for whiling away an afternoon. The grounds also include a vegetable and herb garden, the bounty of which dictates each day's menu, bolstered by seafood from local fisherman and produce from nearby artisans. Guests can dine á la carte, but we'd recommend choosing from one of Di Fabio's tasting menus: either six, eight or 10 courses with an additional Gold Table 10-course offering which 'goes beyond the imagination'. Dishes include fallow deer stuffed with duck and scampi, dark turnip and black truffle plus spaghettoni with scampi and sea urchins, nori seaweed oil and lime.
