Ristorante Dina

Gussago, Italy

In this rustic stone dining room, with its arched ceilings and dramatic chandeliers you will find technically excellent cooking, with just a hint of whimsy. Chef Patron Alberto Gipponi has named the venue after his grandmother, and quotes her wisdom that 'this work is made up of people and their welcome', meaning that within his kitchen teamwork is everything, and out on the floor service is friendly and warm. Gipponi came to cooking later in life, following stints as a musician and a social worker, but he moved fast and secured a stage at Massimo Bottura's iconic Osteria Francescana. The expertise gained under Bottura's wing informs all that he does here at Dina, in dishes such as spaghettoni with garlic, oil, chilli pepper, crunchy bread, frozen oysters and fennel plus a dessert of beetroot soufflé and stracciatella with salted butter.
