A rambling villa on Ischia in the Gulf of Naples that used to belong to the chef's grandparents, Danì Maison is set among fragrant gardens filled with contemporary sculptures. With just six tables, seating 16 guests, it's like being at someone's home except for the open kitchen where the team works tirelessly. Cooking here is rooted in research, creativity and respect for the raw ingredients and culinary traditions of Campania. A couple of the tasting menus are built around champagne and sparkling wine (there's an excellent wine cellar) – another is called 'Up to you, Chef'. Or go a la carte, with innovative flavour combinations such as skate and rabbit with anise and coffee; or cod, mozzarella and raspberry. Desserts get even more inventive with dishes going by the names of 'Art is not a crime' and 'Chocolates in the garden'.
