Madia (meaning cupboard) is as beautiful to look at as it is to dine in. The interiors were crafted by architect Fatima Costa, who has taken the natural elements of wood, iron and marble as the basis for the aesthetic. Views over the kitchen garden enhance the wholesome, natural feel, perfectly reflecting the restaurant's philosophy. Chef-patron Pino Cuttaia greets all his guests – only 40 in any sitting – personally, before delving into his memories to reinterpret classic Sicilian dishes with admirable creativity. The signature 'Cloud of Caprese' is a clever nod to classic tomato and mozzarella salad, while 'Octopus on the Rocks' sees whole tentacles presented on chickpea puree. Lasagne comes with fennel and anchovies; while beef tenderloin is smothered in ash oil. Go a la carte or for the tasting menu, before walking it off with a stroll around the seaside resort of Licata with its 17th century fortress and dramatic coastline.
