When Giovanni Carta and his wife Marta opened Ristorante Le Dune in the tiny town of Mariano del Fruili, close to the Slovenian border, it was the only fine diner in the area. Today, people travel from all over northern Italy and beyond to feast on market fresh seafood under the beamed roof of this terracotta-tinged gem. Fluffy gnocchi with sweet red shrimps from Sardinia sits alongside tuna carpaccio and fresh sea bream, treated with the respect it deserves. A constantly evolving wine cellar contains more than 350 labels from Friuli-Venezia Giulia, Liguria, Tuscany and Sardinia.
