When you visit Bros', you'll need to leave your preconceptions about what makes a restaurant at the door. Proprietor Floriano Pellegrino's mission is to push the boundaries of the avant-garde, and that begins with the absence of a traditional menu. Instead, diners are immersed in a concept that changes twice a year. At the time of writing, that concept is A Man on a Horse. The cooking is unapologetically experimental, with the team working across both a kitchen and a laboratory to create tasting menus of five, eight or 11 courses. Among the restaurant's most talked-about creations is Let's Make Out, a palate cleanser in which citrus foam is served in a ceramic cast of Pellegrino's open mouth. The theatricality of the experience is heightened by the setting: a pared-back dining room with soaring vaulted ceilings, where large round tables and wooden armchairs sit beneath delicate chandeliers.
