Lovingly transforming a mountain hamlet in Italy’s Val Seriana region into a regenerative farm and sustainable restaurant, the group of young farmers behind Contrada Bricconi have made it their mission to revive ancient agricultural rites and nurture traditional systems of crop cultivation and livestock farming. The result? A destination dining location deep in a rural idyll – think, grazing Grigio Alpina cattle, a 100 per cent sustainable supply chain and a deep-seated commitment to elongating harvests through pickling, fermentation and charcuterie. Chef Michele Lazzarini mirrors the area’s terroir, reimagining his native region’s larder with a complex and considered tasting menu. Dine beneath soaring wooden rafters, with views of undulating farmlands, on a menu that shapeshifts with the seasons. Expect the likes of homemade ricotta dumplings with a garden leaves dressing, jerk quail cooked over embers with a sauce made from fermented wild plums and homegrown spices, and delicate rabbit kidneys, sautéed and served with a mushroom jus. In keeping with the founder’s commitment to encouraging a symbiotic relationship between man and mountain, there’s a set price menu on Thursday and Sunday evenings for under 30s.
