Duomo weaves together chef Ciccio Sultano’s personal experiences and the centuries-old traditions of Sicily to create haute cuisine largely based on bold contrasts. Located on a baroque street in the shadow of the Duomo di San Giorgio cathedral. Menus showcase many of the region’s most classic flavours, deconstructed and imagined anew. Think black pork with cantaloupe melon sauce, cod with local truffles and stuffed lamb with yoghurt and saffron sauce, a fragrant dish referencing the island’s Moorish past.
