DaGorini leans in to Italy's hyper-regionality, with every element steeped in the essence of the surrounding countryside of Emiglia-Romana. All the ingredients are local, the recipes are inspired by the area's classic dishes, and even the building has been in the family for years, having once acted as chef Gianluca Gorini's wife's family home. This focus doesn't mean that options are limited though, with guests offered the choice between dining á la carte or from four-, five-, seven- or nine-course menus, all with or without matching wines. Dishes vary based on seasonality, but could include a starter of seared trout, green panzanella, cucumber juice and friggitelli peppers, a pasta dish of tortelli with almond, beurre blanc with vermouth, apricot and rosemary and a dessert of marinated cherries, chocolate, carnation and buffalo yoghurt.
