Nestling just outside Udine, in between the Alps and the Mediterranean coast, this fifth-generation family business began life in 1887 as a café-tobacconist. Chef Emanuele Scarello draws on lifelong relationships with local artisans to source the finest ingredients from the Friuli-Venezia Giulia region and focuses on celebrating each one’s essence in slick interpretations of classic dishes. Seasonal tasting menus including the likes of white asparagus with lemon and caviar sit alongside an international-inspired version featuring combinations such as scallops, citronella broth, ginger and yuzu.
