Casa Perbellini

Verona, Italy

Theatre and fine dining come together at Casa Perbellini, once home to the historic, multi-generational 12 Apostoli restaurant run by the late Giorgio Gioco. Today, the restaurant has preserved its historic murals while reinventing the space with contemporary wood panelling and mid century modern lighting accents. Three prix fixe menus are on offer: Storie di Casa, which leans into chef-patron Giancarlo Perbellini’s culinary tradition; Io e Silvia, a more experimental option; and L’Essenza, a vegetarian menu free from gluten and dairy. The kitchen is also known for fish courses using nori garnishes and shrimp emulsion. Delicately crafted amuse bouches also deserve attention, including the tried-and-true sesame wafer sandwich with liquorice and branzino tartare. The basement cellar dates back to Roman times and holds more than 800 vintages from around the globe, including a sauvignon blanc from Bordeaux dating back to 1967.
