Jamaica's first plant-based, fine-dining experience sits in the hills of St Ann parish. Book well ahead, as Stush in the Bush opens for lunch on Fridays and Sundays only. But don't mistake this for a casual meal: the five-hour prix fixe is more of an immersive nature experience than it is a tasting menu. Guests begin with a guided farm walk through medicinal herbs and fresh produce before moving to an al fresco communal dining area of live-edge wood tables. Dishes are rooted in Ital Rastafarian principles – plantain gnocchi with callaloo pesto, jackfruit tacos, roasted pumpkin hummus and passion fruit beignets. Nearly everything, from the plant-based milks to the condiments, is made on-site. A rotating cast of seasonal house drinks – such as ginger beer accented with lemongrass, a sorrel punch, and a popular passion fruit juice – captures the natural bounty of Jamaica beautifully.
