They don't do things by halves at Half Moon, a luxurious, 400-acre retreat on the sweep of Montego Bay, with its own two-mile stretch of private beach. No surprise, then, that its flagship seafood restaurant is a standout, with a light, airy dining room whose windows frame Caribbean sea-meets-sky views. The food here is upscale Italian, with chef Claudio Delmare at the helm, running from classics like beef tagliata to exceptional homemade pasta, including the squid-ink spaghetti that’s become a signature. Look out for the local ingredients that are deftly woven through the menu, like the conch fritters and snapper in the excellent frittura di mare. Finish with a classic affogato, spiked with Blue Mountain coffee, or – if it’s on the menu that day – a scoop of homemade rum and raisin gelato.
