With a reverence for both tradition and top-quality ingredients, Spain and Japan have more in common culinarily than seems obvious. It’s a consideration that makes the location of this world-class Iberian restaurant in Honshu’s historic gold capital of Kanazawa slightly less surprising. Under the steer of a trio of highly trained chefs, the dining room, set in a wooden former bank building, feels like an echo of Madrid, albeit with all local Ishikawa-sourced ingredients. Two of the chefs – Tatsuro Ume and Keisuke Yagi – trained in Barcelona and to their 15-or-so-course tasting menu they apply a rigorous standard of typical Spanish treatments. A carefully crafted paella features unami-rich Kanogani snow crab, while a take on pinchos morunos – pork skewers – stars turkey thigh and gizzard wrapped in wild wasabi greens from Hakusan.
