A quietly confident bar, owner-bartender Sai Kousei has created a slick-looking space, where guests can settle into the bar counter for a conversation as much as the cocktails. The drinks list is an ode to Hyogo Prefecture: local sake breweries brought to the fore, regional ingredients folded into drinks that range from spirit-led classics to sake cocktails and signatures built with an almost architectural precision. The food is just as considered: think serrano ham, cheese plates and warming pasta dishes that make staying for another round feel less like indulgence than inevitability.
