Of all of Kyoto’s epic temples, Unesco-listed Kiyomizudera never fails to impress with its grandiose scale, far-reaching views and centuries-long heritage. But just around the corner this little spot, set within a renovated historic home, shows an entirely different side to Japan’s ancient epicentre, via a modern approach to flavour, style and sourcing. The focus is on one of the most unsung building blocks in drinks-making – water – with a distinct source fed into the bar for use in ice and mixes. Many of the concoctions also star local teas, and Japanese spirits take centre stage, with gins, vodka and an extensive selection of whiskies appearing on the menu. Arrive early to snag a seat where you can see some of the mixology action in progress, including the unique waterway that runs through the centre of the bar.
