Set in a traditional ryokan built for pilgrims visiting the nearby sacred mountains, Dewaya continues to offer a serene culinary retreat nine decades on. The multi-course experience is limited to eight guests per service, and is known for its restraint, and using ingredients from the region. Smoke plays a central role in the cooking with the help of a robata grill, with guests at counter seats entertained by the chefs at work. Dishes are presented on stone and wood, echoing the natural beauty of Yamagata Prefecture, while local ingredients such as wild mountain vegetables are pickled to develop distinctive textures and flavours. Game meats – including duck and bear – are handled with expert care.
