Molière’s chef-owner Hiroshi Nakamichi spent time honing his skills in the French culinary capital of Lyon and the love of Gallic gastronomy has never left him. Here in Sapporo he delivers a faultless French-style dining experience – complete with amuse-bouches and a cheese course – with the best ingredients that the island of Hokkaido has to offer showcased on three tasting menus. The European influence is immediately obvious from Molière’s setting on the edge of Maruyama Park, with full-length windows overlooking a pretty garden in a formal dining room that could comfortably be in any prosperous French city. Labour-intensive technique might see a summer plate based on 25 different vegetables, each distinct flavour adding to the overall harmony; elsewhere Nakamichi’s local-and-fresh philosophy extends to seafood and fish caught around the island, and organic meat.
