This Edomae sushi joint was founded in the late 19th century and has been attracting raw fish lovers ever since.The current chef-owner Katsu Nakaji serves all the fish he uses after warming it on a hot plate, seasoned with red vinegar for a deeper flavour, but don't expect actual plates. Nakaji will hand it to you (yes, by hand) while explaining the origin of the fish you're about to eat. The omakase tasting menu is the only option available to diners, so get comfortable at the eight-seat counter and watch as the chef and his apprentices masterfully prepare each piece during the immersive, multi-hour experience. It's like being at the theatre. Enjoy freshly cut pieces of the day's tuna and a selection of ever-changing nigiri (bottarga and squid are popular) based on what is available and in season.
