This is a restaurant deeply rooted in the traditions of its landscape. Chef-owner Yotaro Sasaki is descended from samurai and is the fourth generation of his family to own the nearby inn, Minshuku Tono. He learned the art of Japanese cuisine from his father and works closely with the local farmers and fishermen of Iwate prefecture, though there’s also a fair bit that he makes himself: he produces cured and uncured meats and cheeses and grows organic rice to brew doburoku, an unfiltered sake (you can also try his brew at Mugaritz in Spain). Dinner here is based on the ritual of kaiseki, the elaborate multi-course meals historically served at tea ceremonies, with an emphasis on ultra-seasonal ingredients put to thrilling new uses. The setting is as evocative as the cooking, a 200-year-old rice storehouse that combines traditional Japanese styling with modern comfort; there are three double rooms for overnight stays if you want to fully immerse yourself in a beguiling experience.
