L'évo

L'évo is the very definition of a destination restaurant – it's literally in the middle of nowhere, surrounded by lakes and mountains in the spectacular Toyama province, a little black wooden hut right on the banks of the Toga river. Osaka-born chef Eiji Taniguchi has operated L'évo in various guises since 2014, extending the complex to include three four-person cottages for overnight guests alongside the tiny 26-seater dining room and unveiling the reinvigorated resort in 2020. Taniguchi describes his food as avant-garde regional cuisine: his 13-course tasting menu is hyper-seasonal and clearly informed by the surrounding environs and its more esoteric ingredients could include firefly squid caught from Toyama Lake which are considered by experts the world's finest example.
