After years of training in the illustrious cellars of Burgundy, Yuki Hirayama returned to his native Japan. After gaining further experience at local wineries, he finally produced the first wines from his own cellar in 2019. Within sight of Mount Fuji, he harvests Koshu and Muscat Bailey A to make red, white and rosé wines. The delicately pink‑skinned Koshu grapes, in particular, are Japan's most treasured local variety and produce its most famous wines. Visitors can enjoy Hirayama's exceptional bottles while taking in the stunning view of Mt Fuji from his vineyard. Book in advance for an unmissable experience.
