Carob House
Madaba, Jordan
Located in a renovated 1930s residence in the centre of the ancient town of Madaba, Carob House is a farm-to-table community kitchen and restaurant founded to champion sustainable farming efforts in Jordan. After inheriting a farm in 2019, founder Rakan Mehyar set about reviving the ancient plot and simultaneously developed the nearby Carob House as a restaurant and social enterprise. Sourcing ingredients from a network of local producers, Carob House borrows flavours and recipes from the Arab country’s agricultural communities, plating up eye-catchingly colourful salads – roasted seasonal roots with chickpeas, pine nuts and a tahini-carob-molasses dressing; a mountain of strawberry, radish and tarragon; and a black sesame-spiked watermelon and white cheese mix – alongside typical Levantine dips like muhammara and mutabal and hot dishes such as aubergine fatteh and well-spiced braised lamb shawarma. Drinks include homemade rosemary lemonade and fiery house-made arak. Engaging table hosts tell the stories behind and cultural significance of the dishes and guests can also enjoy a farm tour followed by a five-course artisanal meal at the Madaba residence.
