Welcome to one of the world’s most unique restaurants – a gastronomic adventure that takes you from on the sea, to under the sea. A few degrees north of the equator, Ithaa is anchored to the ocean bed, some 16 feet below sea level. Part of the Maldives’ Conrad resort on Rangali Island, entrance to the all-window domed dining room is via a staircase that spirals down from a thatched jetty pavilion to reveal a simple space that lets the 180-degree underwater views do all the talking. Inquisitive black-tip reef sharks, rays and a kaleidoscope of fish may well be your dining companions, but don’t let that distract from the meal that unfolds before you – this is fine dining, island style. Tasting menus – four courses at lunch; six for dinner – marry local flavour and Western influence. Emblematic dishes include crisp lobster tortellini with saffron cream and charred leek, Maldivian tuna ceviche with lemon panna cotta, passion fruit and mango and Black Angus tenderloin with buttered ceps and truffle potato croquett
