Its punning name aside, this Maldives-set restaurant has a serious mission: to serve the perfect steak. It’s something of an obsession for Sri Lankan-Japanese chef Dharshan Munidasa – also the founder of the hugely successful Nihonbashi and Ministry of Crab. Here, it’s all about the premium steaks (Australian wagyu, FYI), cooked with split-second precision on a grill of the chef’s own invention. Inspired by Japan’s yakitori grills, it’s a sleekly impressive piece of kit, where steaks are reverse-seared on skewers – no singeing and grill marks here – then rested in Sri Lankan salt. The results are indecently good, preceded by a signature ‘crackling’ made from the pan-fried trimmings. If most guests, unsurprisingly, are here for the steak, there are other options on the menu, from an eight-rib rack of New Zealand lamb to grilled local yellowfin tuna. The wine cellar is amply stocked and open to curious guests, while desserts are simple but indulgent: a scoop of salted caramel ice-cream or a slice of strawberry-topped French toast.
