It shouldn’t be a surprise at a restaurant whose name translates to ‘heart of the earth’ that only organic and sustainable riches sourced from around Guadalupe Valley make the cut on Diego Hernández Baquedano’s menus. Many of the fruits and vegetables used are plucked from its own orchard, with honey also produced on site, and everything else sourced from neighbours. Ingredients are so seasonal the six-course tasting menu can change daily. Hernández takes traditional, simple dishes such as tamales or bean soup and gives them an haute-cuisine flourish. The restaurant is housed at Vena Cava winery, so there is no shortage of Baja California options.
