Hugging the clifftops of a 3,000-acre peninsula within the paradisical Four Seasons Resort Tamarindo, this seasonal, suitability-focused restaurant marries local Mexican ingredients with classical French and Italian cooking styles. And while the menu – a collaboration with The World’s Best Female Chef 2023, Elena Reygadas – is first class, it’s the view that really wows; the dining space extends out across artificially built cliffs, edged by the still elegance of numerous infinity pools, where diners are treated to a stretching panorama that extends towards the ocean horizon line. Even covered tables enjoy open walls, with additional views of the surrounding jungle foliage. In the kitchen, native ingredients elevate classic European plates: think, Mexican pepperleaf and quelites (wild greens) risotto, chilmole (charred habanero peppers) and octopus tagliolini, lobster tamal, and suckling pig served with achiote (annatto). A seven-course tasting menu showcases the kitchen’s most discerning dishes, but many diners stick to a la carte for a taste of the kitchen’s signature plantain enmoladas, cloaked in a silky mole.
