Expendio de Maiz Sin Nombre

Maize is to Mexicans what rice is to the Vietnamese – the backbone of most authentic meals whether served in the humblest roadside stall or the most cutting-edge urban hotspot. Expendio de Maiz is an unusual combination of the two. Jesús Tornés has essentially transported his rural kitchen from the village he grew up in in the state of Guerrero – complete with a wood-fired comal, stacks of well-worn clay pots and baskets of fruit from his back garden – to a narrow lean to in the trendy La Roma neighbourhood. There is no menu (although vegans and vegetarians are catered for). Instead, the team ask what you like and produce a stream of flavourful dishes based on the tortilla, all made from heirloom corn that they source, nixtamalize and grind in house. Go with someone you like as the seating is rather close.
