Maize is to Mexicans what rice is to the Vietnamese – the backbone of most authentic meals, whether served in the humblest roadside stall or the most cutting‑edge urban hotspot. Expendio de Maíz is an unusual combination of the two. Jesús Tornés has essentially transported his rural kitchen from the Guerrero village where he grew up – complete with a wood‑fired comal, stacks of well‑worn clay pots and baskets of fruit from his back garden – to a narrow lean‑to in the hip La Roma neighbourhood. While vegans and vegetarians are happily catered for, there is no men: the team ask what you like and send out a stream of flavourful dishes built around the tortilla, all made from heirloom corn that they source, nixtamalise and grind in‑house. The seating is close and intimate, but that's all part of the experience.
