Though it only opened in 2024, Form + Matter has already gone on to take No.13 on North America’s 50 Best Bars 2026 list. It partly comes down to the sublime, well, form: a modern speakeasy-style space, with cool steel and marbled countertops, a theatrical line up of bottles suspended over seating, moon-round ceiling lights interspersed with hanging greenery. But, of course, the real transcendence comes via the matter – that is, the drinks. Cocktails crafted from unsung regional ingredients such as yerba mate – and global trending flavours such as miso – are innovative while still remaining firmly fun (names such as a ‘Mi-So Honey’, with browned butter-washed bourbon) proves the trio of founders have a sense of humour). Dont miss the classic pickleback, given a techy upgrade with the addition of homemade pickle cordial to Irish whiskey.
