This quietly ambitious eatery is headed up by chef Victor Toriz, who cut his teeth at spots like Arca in Tulum (ranked No.22 on Latin America's 50 Best Restaurants 2025). Behind a discreet frontage in the outskirts of Condesa, there’s a stripped-back, concrete-floored dining room – which, since word started to spread, is often fully booked. The menu's firmly grounded in Mexico, albeit in understated ways: the dry-aged wagyu tartare might be served with nutty Chicatana ants, while the Berkshire pork chop with roasted pineapple seems inspired by tacos al pastor. Toriz has a flair for unexpected textures and interesting flavour combinations, so don't swerve the more daring dishes, like the pig’s ear with mandarin and almond (a menu highlight) or the terrific grape salad with cultured cream and coriander. Expertly-handled seafood adds to the appeal, as does the well-chosen wine list, with a handful of great options by the glass.
