- No.7 Latin America's 50 Best Restaurants 2025
The farm-to-fork force is strong at Quintonil, named after a green Mexican herb used across the menu. Jorge Vallejo gathers top-quality, sustainable ingredients every day from local gardens, orchards and around Mexico, to best express the country’s diverse pantry. The tasting menu stands out for its delicately artful presentation of every dish, think floral wreathing a pool of mole or a verdant leafy bouquet in the place of a tamale. Notable cuisine curios include duck pibil with elote cream, braised oxtail in black recado sauce, creme fraiche with melipona honey. The chic, understated front of house is led by Vallejo’s wife Alejandra Flores. Fans of regional vintages will be impressed by their ever-changing Mexican Wine pairing.
