With a name that translates to “unique spirit” in Mayan, Huniik is one of the most evocative gastronomic experiences Mérida has to offer. At the helm of the kitchen is chef Roberto Solís, who sharpened his skills internationally at restaurants including Noma in Copenhagen, Per Se in New York City, The Fat Duck in London and Les Créations in Tokyo, but is known best locally as the owner of Néctar, which opened in 2003. With Huniik, his second restaurant, the talented chef has fully polished his unique take on modern Yucatán cuisine. The intimate restaurant, which seats only 16, is marked by shimmering golden stone walls that communicate a sense of ancient opulence. The same restrained glamour is infused in the inventive seven-course tasting menu too, which deftly balances down-to-earth flavours with innovative contemporary presentations. A place with a unique spirit, indeed.
