Of all the reasons to visit a luxury beach resort perched on the Mexican Pacific Coast, dining probably isn’t front of mind. But Rubra is worth your attention – even, some might argue, worth the pilgrimage to glamorous Punta de Mita in Nayarit. Set within the W hotel, chef Daniela Soto-Innes’s tropical modern menu sings with such flavours as banana flower, passionfruit, coconut and galangal. Sink-in linen chairs, concrete, greenery and indoor-outdoor ambiance characterises the space, which comes into its twinkling own after dark as candles throw shadows onto colourfully plated dishes. Try green bean salad with mandarin, jicama and mango, oysters with kiwi mignonette and rhubarb, or tuna tostada with cashews and cucumber. As well as dessert, finish up with a carajillo: a boozy coffee concoction that will not only cap things off, but have you ready to see in the sunrise.
