Set within the grounds of the Puerta del Lobo vineyard, Vertical might be expected to let the wine do the talking, but its cocktails are no afterthought. Drawing with equal conviction on Mexican gastronomy, they hold their own alongside the exceptional cuisine: the crystal-clear Limon Con Coco makes a persuasive case, as does the Negroni De Mango. The kitchen is ingredient-led, drawing mostly on produce from the vineyard's immediate neighbours, a philosophy that feels entirely at home in these surroundings. As a setting in which to slow down, it would be difficult to improve upon: sunshine, open nature and vineyards stretching to the horizon, with food and drink that rise, unhurriedly, to meet it.
