US-born Eric Werner and Mya Henry fell in love with the paradise beach resort of Tulum on a 2009 holiday, moving there to set up Hartwood a year later where they have created a laid-back, jungly haven framed by palm trees. The team travels far and wide each day to source fresh ingredients from Yucatan markets and farms, with the daily changing dishes written on a big wooden board. Everything is cooked in a wood-burning oven and grill in a solar-powered kitchen. Tuck into bold Mayan flavours such as pork empanadas with spicy mayo, grilled pineapple and papaya; ribs with a sweet agave BBQ sauce; citrusy ceviche; and salads made from local jicama and flowers, best washed down with a pineapple habanero or tamarind margarita, or two.
