Respected Moroccan chef Najat Kaanache – who has appeared in her own TV cooking series and trained in the legendary kitchens of El Bulli, Noma and The French Laundry – has brought this inspired restaurant to Fez's Medina. Its fine dining cuisine is largely improvised each day, depending on what is sourced from the market, ensuring the courses are vibrantly fresh and flavoursome. Across two and a half hours, the tasting menu leads guests through ten different creations that combine seafood, vegetables and meat with raisins, pomegranates, raw cacao, marmalades and citrus.
