Amsterdam restaurant Breda celebrates the spirit of the Brabant region, in the south of the Netherlands. Founded by a talented trio – two chefs and a sommelier – who were all born and raised in the eponymous market town, the offering is refined without ever becoming inaccessible. The ‘Chef’s Menu’ (three, four or five courses) contains the likes of soft belly pork with hoisin, and foie gras with pear, pecan nuts, pear puree and smoked Jerusalem artichoke ice cream.
